Sarah Larson’s Apple Cake

Recipe for: Apple Cake

From the Kitchen of: Larson

* 4 cups Pippin apples (peel and cube)
* 2 cups sugar
* 2 cups flour
* 1 ½ t soda
* 2 t cinnamon
* 2 eggs (beaten)
* 2 t vanilla
* 1 cup walnuts
* ¾ cup oil
* 1 t salt

**KISSIN’ KEEPS ME COOKIN’**

Sprinkle sugar over apples in large bowl. Let stand. Sift flour, soda, cinnamon and salt. Add mixture to apples. Stir in eggs, oil and vanilla (mixed together first). Mix well. Add nuts. Pour mixture into 13 x 9 x 2 pan. Bake 350° for 50 minutes or until toothpick stuck in center comes out clean.
